These two recipes with a Turkish hazelnut twist are flavourful and light, which makes them perfect to create a special morning. Roasted Turkish Hazelnut Spanakopita and Broken Wheat Salad is a combination of wholesome ingredients with elegant presentation, which will be perfect for surprising Mom with a healthy breakfast.

Roasted hazelnuts and broken wheat salad
Ingredients
• Turkish hazelnuts roasted 200 gms
• Boiled Broken wheat (dalia) 100 gms
• Dried raisins 20 gms
• Fresh mint chopped 20 gms
• Fresh chopped 10 gms
• Lemon juice 20 ml
• Honey 30 ml
• Salt to taste
• Black pepper crushed 10 gms
• Pomegranate 20 gms
Method
Step 1: Roast the hazelnuts and let it cool
Step 2: Par boil the broken wheat with little water (should not be sticky)
Step 3: In a mixing bowl, add broken wheat, dried raisins, chopped mint, chopped parsley, salt, black pepper, honey, lemon juice, pomegranate and olive oil and toss all the ingredients to make a salad
Step 4: Add hazelnuts and toss again once
Step 5: Serve it in a serving dish and garnish with chopped parsley and hazelnuts

Roasted hazelnut spanakopita
Ingredients
• Spinach 1 kg
• Hazelnut 200 gms
• Feta cheese 150 gms
• Cream cheese 400 gms
• Phyllo sheet 1 packet
• Melted butter 200 gms
Method
Step 1: Roast and chop the hazelnuts and set aside
Step 2: Blanch the spinach and place it in iced water, chop and keep aside
Step 3: In a bowl add cream cheese, feta cheese, chopped hazelnuts, chopped spinach and mix well
Step 4: Cut the phyllo sheet by half rectangular shape
Step 5: Brush with butter, add 15 gms of mixture then fold it in triangular shape, stick the corners with the help of water
Step 6: Bake the spanakopita in 180 degree celsius until golden and crispy
